Sir Henry Browne Hayes transformed ‘a wild and uncultivated tract … to [a] rustic little paradise’, including a picturesque cottage that survives at the heart of Vaucluse House. Wander through the house and its pleasure garden to view contemporary sculptures in organic materials; get tips on growing heirloom vegetables and herbs; sample boutique foods; and learn how to cook rustic-style food. Be inspired by examples of shellwork, rustic timberwork and grotto furniture as part of this celebration of things pastoral and countrified.
PROGRAM

Enjoy the countrified pleasures of good food, art and music surrounded by the picturesque beauty of a 19th century harbourside estate. View sculptures in organic materials throughout the house and garden by Akira Kamada, Merryn Bowden, Adam Jones, Hugh Main and Scott Hill. Be inspired by rustic crafts (both antique and new) throughout the house including the spectacular shell work of Paul Bruce (Shellman), sample food by Australian organic food producers in the colonial kitchen and service courtyard, and relax to the unique sound of the Hurdy Gurdy and Goat Pipes played by Wayward, wandering troubadours.

FOOD DEMONSTRATIONS IN THE STABLES

Liane Colwell, gastronomer, chef and activist hosts four food sessions with guest chefs and food specialists.

10.15am Preserving preserves!
Should we conserve old foodways or find new, safer and healthier ways of preserving produce? One of Australia’s leading food microbiologists, Assoc. Professor Julian Cox from UNSW guides home cooks on how to get the healthiest and thriftiest preserves from seasonal produce-safely.

11.30am Lean, mean, ‘green,’ beans
Can ultimate ‘slow food’ beans be made faster? or even slower? Darren Simpson parts with cherished secrets for this most affordable of eco-proteins.

1.30pm Nuts - the coolest cuisine
Liane Colwell showcases international techniques for making the most of nuts; pastes, milks, forcemeats and emulsions. You will be amazed!

3pm The art of tea
Is tea a ritualistic meditation or a meal? We investigate how to make tea central to your next tres chic entertaining experience; what to serve and how!

11am, 12.30pm, 2pm Tours of the kitchen garden
Learn about the foods you can grow in your own backyard with Naomi Jeffs, Vaucluse House gardener.

1pm Learn how to make rustic planters and hanging baskets.
A talk with curator Scott Hill
